Bagara Rice is a beloved Telangana classic — basmati rice slow-cooked in a spiced base of Ankapur Bagara Masala, caramelized onions, and fresh herbs. A perfect companion to mutton, chicken, or vegetable curries.

🛒 Ingredients
- 2 cups basmati rice, rinsed and soaked for 30 minutes
- 4 tsp oil or ghee
- 1 medium onion, thinly sliced
- 3–4 green chilies, slit
- 1 tsp ginger-garlic paste
- Curry leaves & mint leaves, a handful each
- 1 tsp Ankapur Bagara Masala powder
- Salt to taste
- 4 cups hot water (adjust slightly based on rice type)
- Fresh coriander for garnish
How to Cook
- Soak the rice in water for 30 minutes. Drain and set aside.
- Heat oil or ghee in a heavy-bottomed pot over medium heat.
- Sauté onions until golden brown and well caramelized.
- Add green chilies, ginger-garlic paste, mint leaves, and curry leaves. Cook for 2–3 minutes until the raw smell disappears.
- Add 1 tsp Ankapur Bagara Masala. Stir and sauté for 30 seconds to release the aroma.
- Add the drained rice and gently mix. Sauté for 2 minutes to coat the rice with the spiced base.
- Pour in 4 cups of hot water and add salt. Stir gently without breaking the rice.
- Bring to a boil, then reduce heat to low. Cover and cook for 15–20 minutes until the rice is fully cooked and fluffy.
- Turn off the heat and let it rest, covered, for 5 minutes.
- Garnish with fresh coriander before serving.
